Recipe: Mee Siam

Famous Vermicelli Noodles: Mee Siam

Ingredients:

  • 200g rice vermicelli noodles
  • 200g prawns, peeled and deveined
  • 100g firm tofu, cut into small cubes
  • 1 cup bean sprouts
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons tamarind pulp, soaked in 1 cup of warm water
  • 2 tablespoons chili paste (adjust to your preferred spiciness)
  • 2 tablespoons palm sugar or brown sugar
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • Juice of 1 lime
  • 3 tablespoons dried shrimp, soaked in hot water for 10 minutes
  • 2 hard-boiled eggs, halved
  • Fried shallots and chopped chives for garnish
  • Lime wedges for serving

Instructions:

  1. Prepare the rice vermicelli noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, combine the tamarind pulp and warm water. Use your fingers to break down the tamarind pulp and extract the juice. Strain the tamarind juice to remove any solids and set it aside.
  3. In a blender, blend the soaked dried shrimp into a coarse paste. Set aside.
  4. In a wok or large frying pan, heat the vegetable oil over medium-high heat. Add the minced garlic and chopped onion, and sauté until fragrant and lightly golden.
  5. Add the prawns and tofu to the wok, and stir-fry until the prawns are cooked and the tofu is lightly browned.
  6. Push the prawns and tofu to one side of the wok and add the chili paste. Stir-fry the chili paste until it releases its aroma.
  7. Mix the chili paste with the prawns and tofu, then add the tamarind juice, fish sauce, soy sauce, and palm sugar. Stir everything together until well combined.
  8. Add the bean sprouts to the wok and stir-fry for a minute or two until they are slightly wilted.
  9. Add the cooked rice vermicelli noodles to the wok and toss them with the sauce and ingredients until everything is evenly coated.
  10. Squeeze the lime juice over the noodles and give it a final toss.
  11. Serve the Mee Siam on plates or in bowls, garnished with halved hard-boiled eggs, fried shallots, chopped chives, and lime wedges on the side.
  12. Enjoy your spicy and tangy Mee Siam, a delightful taste of Southeast Asia!
