Recipe: 干炒河粉 (Gan Chao He Fen) Stir-Fried Flat Rice Noodles

Gan Chao He Fen is a delightful stir-fried rice noodle dish that captures the essence of Chinese cuisine. It’s a versatile dish, and you can customize it with your favorite protein and vegetables, making it a perfect go-to recipe for a quick and delicious meal.

Ingredients:

  • 200g fresh or dried flat rice noodles (He Fen)
  • 150g sliced chicken or beef(your choice of protein)
  • 1 cup bean sprouts
  • 2 stalks spring onions, cut into 2-inch lengths
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce 0r vege mushroom sauce
  • 1/2 teaspoon sugar
  • Pinch of white pepper
  • Optional: sliced chili or chili flakes for added spice
  • Optional: a few drops of sesame oil for extra flavor

Instructions:

  1. Prepare the rice noodles:

I am using fresh rice noodles (He Fen), blanch them in boiling water for about 1-2 minutes, then drain and set aside.

  1. Mix the sauces:

In a small bowl, combine the light soy sauce, dark soy sauce, mushroom sauce, sugar, and white pepper. Stir well to create the sauce mixture.

  1. Stir-fry the protein:
  • Heat a wok or a large frying pan over high heat. Add one tablespoon of vegetable oil and swirl it around to coat the pan.
  • Add the minced garlic and stir-fry for a few seconds until fragrant.
  • Add the sliced protein (chicken or beef) and stir-fry until it is cooked through. Remove the cooked protein from the wok and set it aside.
  1. Stir-fry the vegetables and noodles:
  • In the same wok, add another tablespoon of vegetable oil and heat it over high heat.
  • Add the bean sprouts and spring onions, and stir-fry for about a minute until they are slightly tender.
  • Add the softened rice noodles to the wok, tossing them with the vegetables.
  1. Add the sauce and protein:
  • Pour the sauce mixture over the noodles and vegetables. Toss everything together until the noodles are evenly coated with the sauce.
  • Add the cooked protein back to the wok and continue to stir-fry for another minute until everything is well combined.
  1. Optional spice and flavor:
  • If you like spicy, you can add sliced chili or chili flakes for a bit of spiciness.
  • For extra flavor, you can just drizzle a few drops of sesame oil over the dish and give it a final toss.
  1. Serve and enjoy:
  • Transfer the Gan Chao He Fen to serving plates and must enjoy it hot.
