  • 100g rice vermicelli noodles
  • 500ml chicken broth
  • 200g chicken breast
  • 1 tablespoon vegetable oil
  • 2 cloves garlic (minced)
  • 1-inch piece of ginger (sliced)
  • 1 small onion (sliced)
  • 2 stalks of spring onions (chopped)
  • 100g bean sprouts
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon ground white pepper
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lime wedges for serving

Instructions:

  1. Prepare the rice vermicelli noodles according to the package instructions. You can bought it in any grocery store. Usually, soaking them in hot water for about 5 minutes will soften them. Drain and set aside.
  2. In the pot, heat the vegetable oil over medium heat. Add the minced garlic, sliced ginger, and sliced onion. Sauté until the onions become translucent and the garlic is fragrant.
  3. Add the chicken to the pot, and stir-fry until they are cooked and lightly browned.
  4. Pour the chicken into the pot, and bring it to a simmer. Let it cook for a few minutes to allow the flavors to meld together.
  5. Add the soy sauce, fish sauce, ground white pepper, and salt to the broth. Adjust the seasoning according to your taste preferences.
  6. Once the broth is well-seasoned, add the bean sprouts and chopped spring onions to the pot. Let them cook for about a minute or two until they are slightly softened.
  7. In a separate pot, blanch the rice vermicelli noodles in boiling water for about 1-2 minutes or until they are fully cooked. Drain the noodles and divide them into serving bowls.
  8. Ladle the hot soup over the rice vermicelli noodles in each bowl, ensuring that the meat and vegetables are evenly distributed.
  9. Garnish the Meehoon Sup with fresh coriander leaves and serve with lime wedges on the side.
  10. Squeeze lime juice into the soup before eating to add a tangy and refreshing flavor.
