Ingredients:

  • 200g fresh hor fun (wide rice noodles)
  • 150g fishcake or sliced chicken or beef or fish cake (your choice of protein)
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 cup bean sprouts
  • 2 stalks spring onions, chopped into 2-inch lengths
  • 2 eggs, beaten
  • 1 tablespoon cornstarch (cornflour)
  • 500ml chicken or vegetable broth
  • 3 tablespoons oyster sauce or vege mushroom sauce
  • 1 tablespoon light soy sauce
  • Salt and white pepper to taste

Instructions:

  1. Prepare the hor fun:

I am using fresh hor fun, blanch them in boiling water for about 1-2 minutes to loosen them. Drain and set aside.

  1. Cook the protein:
  • In a wok or large frying pan, heat one tablespoon of vegetable oil over medium-high heat.
  • Add the minced garlic and stir-fry for a few seconds until fragrant.
  • Add the sliced chicken or fish cake and cook until they are fully cooked and slightly browned. Remove from the wok and set aside.
  1. Prepare the egg gravy:
  • In a small bowl, mix the cornstarch with a few tablespoons of the chicken or vegetable broth to create a slurry. Set aside.
  • In the same wok, add the remaining vegetable oil and heat it over medium heat.
  • Pour the beaten eggs into the wok and scramble them until they are just set.
  • Add the oyster sauce, light soy sauce, and the rest of the chicken or vegetable broth to the eggs. Stir well to combine.
  • Slowly pour in the cornstarch slurry while stirring continuously to thicken the sauce.
  1. Stir-fry the hor fun and vegetables:
  • Add the blanched hor fun to the wok, tossing them in the egg gravy until they are evenly coated.
  • Add the bean sprouts and chopped spring onions to the wok, continuing to stir-fry until the vegetables are slightly tender.
  1. Season and serve:
  • Season the dish with salt and white pepper according to your taste preference.
  • Transfer the Moonlight Hor Fun to serving plates and top with the cooked chicken or fish cake.
  • Garnish with additional spring onions if desired.
